Made by Lagavulin, one of the three Kildalton Distilleries in the south of Islay and sits comfortably in between Ardbeg and Laphroaig at the "Hollow by the Mill", translated from the Gaelic lag a'mhuilin. The standard Lagavulin single malt is 16 years old, though they have also released a 12 year old cask strength variety, as well as their Distiller's edition, finished in Pedro-Ximenez casks.

Elaboration

The Lagavulin 16 years, makes a very slow distillation, about five hours for the first distillation and more than nine in the second. The slowness of this process is what gives whiskey roundness and smoothness. The fermentation of barley is also slow, between 55 and 75 hours. Mainly it aged in European oak barrels refillable. Undoubtedly, the longest period of any of the Classic Malts maturation.

Tasting notes

Lagavulin Single Malt Whisky is characterized by its strong peat flavour and iodine overtones. Deep amber colour. Aromas of bergamot surrounded by a complex of more sweet, creamy aromas. Palate dry at first, offset by the sweetness of the sherry. With water, evoking a sophisticated smoky taste. Powerful and peaty finish. Hints of toasted sesame seeds and basil.
